PW’s pasta with pesto cream sauce

Oh look, she’s cooking in the kitchen again. I think spending those weeks in the little apartment have left me wanting lots of home cooked food and an excuse to use my thermomix again. Plus receiving the new PW cookbook in the mail has me itching to try out recipes like this one. This was a huge hit at our house and I think it’s because it’s a little bit more subtle than straight pesto on pasta. Everyone including elodie gobbled it all up and we have some leftovers for dinner tonight since retro daddy was away. The original recipe is here and also in Pioneer Woman’s latest book but I’ve converted this to the Thermomix.

cream and butter to pesto
mmmmmmm leftovers

p.s the recipe called for heavy cream but I try to substitute with lower fat alternatives especially with dairy when I can. It means I can eat more chocolate and dessert (KIDDING!!!!!!!!!!!!) but seriously this recipe tasted great with low fat cream.p.p.s how do I take photographs and convert a recipe at dinnertime with 4 little kids and a cat at my feet? A huge playroom

Recipe type: Dinners
Serves: 4
What you'll need
  • 1 bunch fresh basil
  • ¾ cup parmesan (cubed)
  • 3Tbsp pinenuts
  • 2 garlic cloves peeled
  • salt and pepper
  • ⅓ cup extra virgin olive oil
  • ½ cup light pouring cream
  • 2 Tbsp butter
  • 400g pasta (fusili or whatever you have going)
  • 4 roma tomatoes, diced (I used mini roma tomatoes)
  1. Place parmesan in TM bowl and process on speed 9 for about 10 seconds to grate cheese.
  2. Add in basil leaves, pine nuts, garlic, salt and pepper and process on speed 3 with the MC off.
  3. Gradually pour in the olive oil to make the pesto and increase speed up to speed 5 which takes about 1 minute.
  4. Taste and season well. Set aside and rinse out bowl well.
  5. Now pour cream and drop butter into TM bowl. Heat for 2 minutes at 70 degrees on speed 2.
  6. Pour into pesto and combine. Add extra seasoning if required.
  7. Add in tomatoes.
  8. Now add in your hot cooked pasta which will be ready and stir well.
  9. Serve and enjoy. I loved lots of extra black pepper on top but that’s just me.

  1. Oooh I want your playroom!!
How will it go in Winter? Plenty of rugs and cushions I’m guessing.
But we’d fit all six of our littler ones in there!
    And YUM!

  2. I have saved the recipe. Will let you know how it turned out.

  3. Amei essa sala grande e crianças concentradas.Lindas!!!Beijos.

  6. Love Pesto Pasta, something the whole family will eat.
Such a great playroom, the sun in there in winter will no doubt be glorious and warm it up, some cosy couches and you could probably sneak a cheeky nap in there too!

  7. Great family space.

  8. Well, veggie burgers were on the menu tonight, but this just looks a whole lot easier! Yay for super quick Friday night dinner.
That play room is awesome. I’ve got other 4 here I am willing to offer to see what it’s compacity is really like 😉

  9. I envisage a gorgeous and bright rug in that playroom. What a great canvas to work with.

  10. Dinner looks great.
The play room looks even better. Are you going to put furniture in it as well. Or are the kids just going to have a big space to play in?

  11. I am in awe of that playroom – and I absolutely love pasta with pesto. Will have to try that one. I’m so glad I’ve found your blog and have been checking back daily (thanks for posting so often). You have such a down to earth and cheerful way of writing that I can’t believe you cram as much in to your life as you do. What an inspiration (I’m writing at 5:45am because that seems to be the only time I get to myself these days!)

  12. LOVE LOVE LOVE this recipe Corrie, just my kinda meal.
And I reeeeeally covet your playroom, that is incredible. I am not kidding, my entire downstairs area would fit into that room! xo

  13. I know why you keep banging on about your thermomix, I went to a demo last night … AMAZING. It really does do it all. Can’t wait to be able to get one. Keep the recipes coming.

  14. Great room for the little ones, that is not your place too out the window to the left?
Love the look of the TM but not sure with just the two of worth the money.
