warm potato salad

You can't go wrong with potato salad. We like ours warm with a really creamy mayo.

What you'll need
- 1kg baby potatoes
- Woolworths Select Whole Egg mayonnaise
- 4-5 gherkins, finely slice
Instructions
- Boil potatoes whole with the skin on. Once cooked, drain and run under cold water for a minute.
- Slice each potato in half and add mayonnaise and the sliced gherkins. Very gently stir through.
- Serve
Roast pumpkin, spinach and feta salad

What you'll need
- ½ butternut pumpkin
- 200g feta ( I love danish feta)
- 1 bag baby spinach leaves
- 2 handfuls pinenuts
- balsamic vinegar
- mustard
- honey
- olive oil
- salt & pepper
Instructions
- Peel and cube the pumpkin. Place on a lined baking tray and drizzle with olive oil and season with salt and pepper.
- Roast in oven for about 30 minutes until tender and slightly golden.Leave to cool slightly
- Place pinenuts in frypan and toast lightly for a minute or two. Keep moving the nuts around in the frypan and keep an eye on them! You want them to be golden in colour and not black.
- Lay a bed of spinach down on a platter/salad bowl. Top with pumpkin, then feta and then pinenuts.
- Using a jar or glass place a tablespoon of mustard, a good dash of balsamic vinegar, 2 parts of olive oil, a tablespoon of honey. Shake or whisk together and season with salt and pepper.
- Pour over the top of salad and enjoy.
Tomato and butter bean salad

What you'll need
- 1 can Woolworths Select butter beans
- 3 large tomatoes
- 2 cucumbers
- 1 lemon
- mint leaves
- olive oil
- salt & pepper
Instructions
- Peel cucumbers and cut into large cubes. Chop tomatoes to about the same size.
- Drain butter beans, rinse under cold water and combine gently with cucumber and tomatoes
- Drizzle with olive oil, lemon juice, ripped up mint leaves and season.
My favourite salad at the moment is spinach, roasted pumkin, fetta and walnuts. I make my own dressing using dijon mustard, love it, can’t get enough. I have a feeling that beetroot salad will become my next favourite, with beets growing in my vegetable patch I will have to do something with them. lol
I’m going to steal the Roast Pumkin, spinach and feta salad – delish!
I love the pumpkin salad too but instead of using feta, I use goats cheese rolled in ash. It’s quite delicious and yes, a crowd pleaser here too!!! For a quick, no fuss dressing, I use Paul Newman’s Own Light Balsamic dressing, easy peasy!!
