My quinoa burger

A while ago I repinned the most delicious looking quinoa burger I’d ever seen. I love quinoa but it’s been a while since Ive made it. But then I googled quinoa burger and found another recipe and bought the ingredients for that one. Then I went back to pinterest and realised it was a totally different burger recipe – one was vegan and one was vegetarian. I then realised I didn’t have any cottage cheese for the vegetarian one. So I decided to take a bit from each recipe and what I had to create my own quinoa burger. And they are so good…………………

What you'll need
  • 1 cup uncooked quinoa
  • 1 can of chickpeas, pureed
  • ¾ cup grated cheese
  • 1 finely grated zucchini or carrot
  • ½ red onion finely diced
  • ¼-1/3 cup plain flour
  • handful each of fresh herbs (I used flat leaf parsley and coriander) OR tsp dried herbs
  • 1Tbsp vegetable stock powder/concentrate
  • salt and pepper to season
Instructions
  1. Boil 2 cups water and a dash of salt. Once boiling add in your quinoa and bring to the boil, simmer for 20 minutes until cooked and the water is absorbed.
  2. Place into a large bowl.
  3. If you have a thermomix or food processor then finely chop your onion and zucchini and add in the rest of the ingredients (except for the flour) and process for up to a minute.
  4. Add this mixture to your cooked quinoa and plain flour and mix well. Add in extra flour or seasoning if needed.
  5. You want your mixture to be sticky though (too sticky to handle) so if you don't need the flour then don't add it. I dropped large Tablespoonfuls into a frypan of hot oil, flatten with a fork once in the pan then shallow fry with some oil ( a couple of Tablespoonfuls of oil is good)

  2. They look yummy. With this diet I’m getting more and more into veggie versions of things since meat can just make things so much more calorific. I shall be trying these but will keep them a secret from the hubby until he’s given them a go, I’m not his carnivore tendancies could cope with it! 😀

  14. These look delicious! Any ideas for chickpea substitute? My husband is allergic to legumes and beans. (tough to cook!)

  15. These are jam packed with flavor and nutrition, yummy! I added an egg and they were much thicker. For the seasoning I added a 1/2 tsp of ground mustard, 1/2 tsp of celery salt, and 1/2 tsp each of garlic powder and onion powder. WOW they turned out more like thick cakes, and not so runny. The other way was good too– like potato pancakes. I know adds a new dimension, and a different veggie version. The garbanzos should be drained and reserve the liquid as you puree.
    For Kyra whose hubby can’t have beans, try hominy as it has the same texture of the pureed beans.

  16. Thought I’d try these out for Mr fussy 3’s dinner. He likes quinoa and he likes pancakes so let’s hope he loves these! Will be waiting til tonight for him as he’s at kindy today but in the meantime, they just made a delicious lunch for me! Can’t wait to do them for Mr 4 months once he starts on solids and has the hang of finger food. So nutritious!
