Time for a healthy recipe that you’ll love! I tried 3 times to get this recipe right and it was always dry but I found one of donna’s muesli slice recipes and combined her technique with honey & oil and my recipe and voila…perfection!
4 cups muesli
1/2 cup flour
1/2 cup brown sugar
1/2 cup choc chips (optional but I need chocolate in my recipes)
1/2 cup honey melted over low heat for a few minutes and 1/2 cup oil whisked in
Combine all dry ingredients and mix in honey & oil mixture and press into lined square or rectangle tin. Press it down nice and firmly all over, I use the back of a wet spoon. Bake in 170 degree oven (160 if fan forced) for 40 minutes. You want it golden on top but don’t worry if it doesn’t look cooked all over as it firms up in the tin. Leave to cool for about an hour in the tin and then cut and enjoy!

Yummy altered recipe Corrie! I made that recipe the other week and one daughter liked it and the other didn’t but the chocolate chips might be more of a winner. Thanks Corrie:)
Ooooh, I love muesli slice! I’ll be baking that tomorrow with G as a lasu hurrah before school goes back on Tuesday.
Mmmmm, gonna have to try this one, but substitute the chocky with blueberries or dried apricot – the options are endless…
I just tried Donna’s muesli bar recipe this week. I used all honey too. I over baked them a bit though as I worried they were too soft – so they ended up a bit dry. But still really good. I’m going to try maple syrup next time.
I just tried the Muesli Bars from the new Donna Hay Kids Annual – I will definately give this one a try too – with 3 hungry boys, nothing seems to last long!
