This is my favourite dinner at the moment. Inspired by an instagram pic from Against All Grain and I figured out how to do the smoky potatoes. I hope you enjoy this one. It’s great for families because you can do 2 chickens and have leftovers the next day. Having a chicken and mayo sandwich on white bread is right up there with egg and mayo on fresh bread for me when it comes to all time favourite lunches.
roast chicken + smoky sweet potatoes (gluten + dairy free)

Serves: 6-8
What you'll need
- 2 whole chickens (we use free range organic)
- 2 -3 large sweet potatoes
- olive oil
- smoked paprika
- vegetable stock or salt
- pepper
Instructions
- Place the chickens in a roasting dish and cover with a bit of stock and pepper. Pour on some olive oil and rub into the chicken skin.
- You can also chuck a quartered lemon in there if you like or some herbs on the chicken.
- Roast in a 180 degrees oven until cooked. I generally do mine at least 1½ hours
- Peel and cube the sweet potatoes and lay on some baking paper on a baking tray or dish. Add in a bit of olive oil, pepper, salt and smoked paprika. Go crazy with the smoked paprika. I usually don't but you are baking it out so be generous.
- When the chickens have about ½ hour to go pop the potatoes in the oven and stir a few times throughout cooking.
- Serve up with some wilted spinach or a side salad and lots of nice warm chicken.
- This is also great cold the next day.

Hi Corrie! This looks so yum! The problem in our house is I’d have to cook 4 chooks and 6 times that amount of veggies to have a hope of leftovers!!! And there are only 5 of us! Mind you we have 3 boys (the 4 and 12 year olds are bottomless pits) and a hubby with a physical job who is hanging out for a good home cooked meal at the end of the day!
Ps hope your loving your TM 5! You can make the HUGEST batch of custard in next to no time!
