Chicken and vegetable lasagne is a new recipe that I’ve made for the family and am sharing with you…………
chicken + vegetable lasagne

What you'll need
- 1 onion
- 3 cloves garlic
- 3 zucchinis
- 3 carrots
- 500g chicken mince
- 1 large jar tomato passata
- handful fresh parsley
- lasagne sheets (we use gluten free)
- 50g butter
- 50g flour (we use gluten free)
- 500mls milk
- 1 cup cheese
Instructions
- Finely chop onion and crush garlic. Saute in some olive oil for a couple of minutes until softened.
- Grate up the zucchini and carrot - I do this in the thermomix for a couple of seconds on speed 7 and add to the onion. Sweat down for a couple of minutes with some salt and pepper added.
- Drain off any excess liquid - I like to keep it on side and add it back to the mix - and add in the chicken mince and brown. This doesn't take too long.
- Add in tomato sauce, parsley and season well. Leave to simmer.
- Make your white sauce - I do mine in the thermomix for 7 minutes on speed 4 or you can melt your butter, whisk in the flour and get the mixture to bubble. Once bubbling whisk in your milk and gently heat until the sauce thickens and you have a lovely thick white sauce. Season with salt pepper.
- Spread out some chicken sauce into a large baking dish. Top with lasagne sheets and repeat until all of the chicken sauce is used and make sure you spread out the sauce over every bit of lasagne sheet so that they cook properly.
- Now put lasagne sheets on top of the last of your chicken mixture, top with the white sauce and spread it out. Top with cheese and bake in a 180C oven for about 30-40 minutes until golden brown and bubbly
- Remove from the oven - don't burn your tongue while taste testing which is what I usually do and serve. We love this with some green salad on the side and it tastes even better the next day.
So the lasagne was delicious and the picture of the kitchen afterwards is not so attractive. Makes me glad I have a dishwasher and am not hand washing this lot.
Will be off to the market soon to stock up as I loathe those chemicals. Not fair!!! I am not fortunate enough to have a dishwasher in my home. Does this mean I’m not eligible to enter the competition?!!!!! :-((
Of course not. Friend, neighbour, family member have a dishwasher u can use to test it out. You take them something nice to eat and have a good chat then write a quick review. Easy
I always use Finish in my dishwasher too. I will be interested to see how the Finish Power and Pure works on my dishes.

Sadly we aren’t allowed to use tablets in our dishwasher. The manufacturer if emphatic about powder. But yeah, we tried others that were cheaper and went back to Finish powder and rinse aid. Makes a huge difference. And that once-a-week stuff which is expensive also seems to make a huge difference to the machine’s longevity and the results we get.
wow I hadn’t heard of that! mind you I use pods in my clothes washing machine and the service guy came out and told me I should be using front loader powder in my top loader. That confused me:)
I use Finish at home, the one with Baking Soda and my dishes always come out sparkly clean. I have also had a craving for lasagne…. this is now on the menu to make tomorrow night

I made this last night and had it for lunch today, I must say it was delicious. First time i’ve ever made lasagne.

I’m a long time reader. I never coment because of my bad English. But its the second time I hear you say that the lasanha takes a lots of dirty pans… I do the lasanha only on thermomix (here – Portugal – is called Bimby). So by the end of cooking I have only the thermomix and the baking dish to wash. I even chop the cheese… So, the steps are: chop the cheese and reserve, chop the onions, vegetabes and whatever take your lasanha and cook in thermomix, assemble the lasagna, do the white sauce, and the rest you know it… I do every step without washing the thermomix.
The lasagna is the recipe that the demonstrator do when selling Bimby (Thermomix)…

Less chemicals sounds fabulous as we have slowly but surely been cutting down household chemicals over the past year or so. Plus how good does your lasagna look!
I cannot begin to imagine spending two years without a dishwasher!
it was tough! I enjoyed going to hospital to have a baby and letting hubby have a taste of 6 days of dishes:)
I use a fraction of the recommended laundry detergent in my washing machine and add some bicarb to soften the water instead. It makes the smaller amount of detergent much more effective, so I still get ultra clean clothes (including the grass stained footy gear!) with less chemicals and less cost.
I totally agree, just started using the dishwasher in our place and I cannot use anything except Finish. Homebrand juse doesn’t cut it.
That lasagne looks delish! I was just having a craving for it, now I might need to make it 😉 will be looking for those tablets, I can only use finish. In my dishwasher, but I just hate the chemical smell.. Yuck!
I’ve waited 20yrs for a dishwasher & with four kids…so now with my new kitchen, my dishwasher gets a workout! I am in love. I bought the ducks guts in dishwashers just because I figured I deserved it. I am in love haha
I’m so glad you shared your Lasagne recipe! A friend makes a lovely chicken vege lasagne BUT she won’t share her recipe used. It irritates me when people don’t want to share their recipe – I like to vary every recipe given to me according to my own preferences. Thank You Corrie.
I made this lasagne tonight. It was delicious and I believe it will become a regular dish. I cheated though and used creme fraiche instead of making white sauce and then popped the cheese on top.
