honey, fruit + muesli balls

Sometimes, just sometimes, I like a treat that is good for me. It’s generally the days I’ve been to the gym and want something sweet but know I shouldn’t eat chocolate since I’ve just sweated myself silly jumping around for an hour. We’re all sweet tooths in this house (with the exception of Finn) so this recipe hits the spot as it’s sweet, healthy and easy. Easy as in you don’t need to bake it easy. But since I need a bit of chocolate in my day I did add a teensy bit to the recipe but it’s totally optional.

fruit + muesli balls
2 cups toasted muesli

1 cup dried fruit (apricots, raisins, pears or peaches  – whatever you like)
1/4 cup white choc chips (like I said, optional)
1/4 cup honey
60g butter
3/4 cup shredded coconut

Just pop your muesli, apricots, choc chips, honey and melted butter in a food processor and process for two to three minutes. Roll mixture in balls, coat in coconut and refrigerate for at least an hour.  And that’s it. Put the jug on and enjoy a few when they’re ready. A real no brainer. If you have a Thermomix then put your butter in the TM bowl and melt on 100 degrees for 1 minute and 40 seconds on speed 1. Add in the rest of the ingredients except for the coconut and process for 2 minutes on speed 3. Roll into balls, coat in coconut and refrigerate. I just put them straight in a tupperware container and eat them when I get pecky! 
p.s If you want to make these for school just remember to go for a nut free muesli!

  2. Oh I LOVE your quick and easy recipes Corrie. I am with you, sometimes I don’t want to gorge on bad stuff completely, but need a sugar fix… being a sweet tooth also… so these babies would be perfect. Another one to add to the growing list of ‘must try’ :o) xo

  3. I just made these and they look great. They are in the fridge cooling. I actually made them as a nut free treat for school and then as I was putting everything away, I realised the muesli had nuts in it. DOH!

  4. YUMMO I love making these but have started a clean eating lifestyle and try to avoid butter and sugar! I simply now replace with macadamia oil and honey is sweet enough or maple to add to these great balls. What is even better, you can make your own LSA mix (linseed, sunflower seeds and almonds) blitz them into fine flour and then add your dried fruit macadamia or coconut oil.
    For those that cannot have nuts simply just add oats, wheatgerm and load with dried fruits! Xx Dani
