chicken and chorizo with quinoa

What you'll need
  • 1 onion
  • 500g Woolworths macro Free Range chicken thigh fillets
  • 1 chorizo sausage, sliced (gluten free)
  • 2 cans Woolworths Select diced tomatoes
  • 1 can Woolworths macro Organic Chick peas
  • sprinkling of smoked paprika
  • 1 green capsicum
  • ½ cup Woolworths Select liquid vegetable stock
  • bunch of flat leaf/Continental parsley
  • 250g Woolworths macro organic quinoa
Instructions
  1. Dice onion and saute in a little olive oil for a few minutes. Place in bottom of oven dish.
  2. Slice capsicum, chorizo and chicken and add to the dish.
  3. Pour in the drained chickpeas followed by the 2 cans of tomatoes.
  4. Add in the stock and paprika and give a good stir.
  5. Place in a 180C oven for at least 40 minutes with a lid or foil on the dish.
  6. Prepare quinoa according to instructions on the packet or weigh into thermomix basket and top with 500mls water. On speed 5 let the water swirl around for at least 10 seconds.
  7. Cook quinoa for 20 minutes, varoma temperature, speed 4.
  8. While your quinoa is cooking remove lid or foil from your oven dish and bake for 20 minutes.
  9. Serve up the chicken on top of quinoa and garnish with torn up parsley on top.
