I love my soup sweet so 2 apples would work for me, if you're not a fan of sweet soup just 1 apple will be perfect.

What you'll need
1 brown onion
2-3 large parsnips ( I only had 2 parsnips so used a potato too)
1 -2 apples
600ml vegetable stock
pouring cream to serve
salt and pepper to taste
Instructions
Peel onion and slice in half. Place in thermomix bowl and chop on speed 5 for 10 seconds
Scrape down the sides of the bowl, add butter and sauté for 3 minutes at 100 degrees on speed 1.
Scrape down bowl again, add roughly chopped vegetables and apple and process on speed 5 for 10 seconds.
Scrape down bowl, add in stock and cook for 18-20 minutes at 100 degrees on speed 1.
Now we're going to puree the soup so gently increase the speed from speed 1 to speed 9 for about 20 seconds. Remove lid carefully, taste and season.
I like to add a bit of cream now and gently combine.
Serve and enjoy.
If you don't have a thermomix just roughly chop your vegetables, sauté your onion in some butter or oil for a few minutes. Add in the vegies and apple and sauté about 5 minutes. Add in stock, bring to boil, simmer for about 20 minutes. Puree, season and add in a bit of cream and enjoy.
