Super easy to make and would be perfect in lunchboxes

What you'll need
1 pack Macro Vegetarian Eggplant and Lentil Balls
mountain bread
Macro Vegetarian Hummus
spinach or lettuce leaves
Instructions
Heat up a few of the Eggplant and Lentil Balls in the microwave for at least 1 to 2 minutes.
Lay out a piece of mountain bread and spread in hummus. Top with lettuce leaves and some grated carrot if you like, top with the heated Eggplant and Lentil balls.
Top with some dollops of hummus or sweet chilli sauce if you like something a bit more spicy.
Roll up and enjoy.
