What you'll need
  • 165g raw sugar or caster sugar
  • 225g self raising flour ( I used gluten free)
  • 1 tsp ground cinnamon
  • 165g cold butter, cubed
  • ⅓ cup flaked almonds
  • 1 egg
  • 1 jar fruit mince or 1½ cups homemade fruit mince
  • icing sugar to finish
Instructions
  1. Place raw sugar in TM bowl and process 10 seconds, speed 9.
  2. Alternatively start with caster sugar, add in flour, cinnamon and rub in the butter.
  3. If you have a thermomix then add in flour, spice and process 5 seconds speed 5. Add in butter and process for 1 minute on speed 4 until it resembles breadcrumbs
  4. Now remove 1 heaped cup of this mixture. To this cup add in the almonds and mix with your hands so that you have a crumbly buttery topping. And set aside for later.
  5. For the base add an egg to your mixing bowl with the original butter flour mixture and process in the thermomix for 20 seconds speed 4 until you have a nice smooth batter for your base. You can do this with a wooden spoon or mixer.
  6. Spread into a lined lamington tin, top with fruit mince then crumble the topping mixture over the top
  7. Bake for about 30-35 minutes until lightly golden on top in a 180 degrees oven
  8. Remove from oven and leave to cool in tin
  9. Dust with icing sugar when serving. Great on a dessert platter or served warm with ice cream or custard.
