carrot + coriander soup with lemon and yoghurt

The weather has definitely got chilly here and the central heating is on. We haven’t braved the fireplace yet but it’s definitely cold and my thoughts turn to soup for dinner. Mind you not all of the family considers soup a dinner but I do.

This is a super easy one that I started making when I lived in London. Definitely soup weather there. It’s super easy and super healthy and great if you’re watching your weight and looking for a meal that won’t add the kilos this winter. Also the ingredients are super easy to remember making it great to pick up a few things from the shops, come home and make it. And you know how some soups take all afternoon to make? Well this one doesn’t. Nice and easy.

Serves: 4-6
What you'll need
  • 1 brown onion
  • 1 Tbsp olive oil
  • 1kg carrots
  • 1 litre Woolworths Select Vegetable stock
  • 1-2 cups water
  • 1 bunch coriander
  • 1 lemon
  • 4 - 5 Tbsp Woolworths Select Greek Yoghurt
Instructions
  1. Dice onion and saute in olive oil for a few minutes. I add a dash of salt to help the onions soften.
  2. Add in peeled and diced carrots and cook for a couple of minutes, add in stock and bring to boil. Simmer and cook until the carrots are nice and soft which is about 20 minutes.
  3. Carefully pour into food processor or you can use a stick blender and add in a big handful of fresh coriander.
  4. Puree and make sure you get all the carrot bits. Nothing worse than having a pureed soup and finding a chunky bit in it.
  5. Serve in bowls and top with a tablespoon of greek yoghurt, a good squirt of lemon juice (spare the pips) and a sprig of coriander. Done
  6. Serve with some crusty bread or toast and you have one delicious winter meal.

  1. Yum! Loving all the soup recipes that are being published at the moment. Out coriander is going great in our veggie garden so will have to use it in this recipe. Soup is such a great way to get kids to eat veggies too! :)

  2. Yum that looks good. I love soup in winter, not many others living in this house do though so generally I miss out, but being on holidays right now means lots of time for making soups for a nice warm lunch. I’ll be trying this one out for sure.
    Have you tried the creamy chicken and brown rice soup from Quirky Cooking? Its amazingly good.
    Might have to declare next week soup week!

    • oh no I haven’t tried it but I did buy all of the ingredients! will have to try it as the brown rice is still sitting there!

  3. I wish my kids ate soup! We eat it for dinner at least once a week, and they’re all like “NO WAY”.

  4. Lovely soup – i might make it now with my stack of carrots. Unfortunately the coriander in the garden got eaten by our guinea pigs who found their way to the veggie patch, so off to the shops I go. Its definitely soup weather isn’t it. Can’t face salads right now. T x

    • totally soup weather! those cheeky guinea pigs! we haven’t started growing anything yet BUT I’m sure the rabbits will be into anything we try

  5. That looks awesome, you’ve probably already tried this but what about putting it in much smaller bowls with strips of toast and stuff and saying it’s a dip? But then, if they’re like my kids they’ll probably just look at you like “we’re not idiots you know” so I’ll stop the unsolicited advice now….:)

  6. I love your recipe. I make a similar carrot soup that is also very popular in our house. I add a quarter cup of red lentils and a small can of coconut milk. But I like your idea of yoghurt.
