date + almond balls (gluten + dairy free)

Tuesday afternoon after school, chicken was roasting in the oven, the kids had worked their way through the rice crackers and I needed something sweet and quick for afternoon tea. Chuck a few things in the thermomix and voila….sweet and healthy balls. But that did not sound like a good recipe name……………….so I went with date and almond balls.

I know there are lots of different recipes for healthy treats but I love chucking a few things in from the pantry and hoping for the best. I’m also keen to try out the coconut oil which I had bought because a few recipes called for it. I think the coconut oil and the maple syrup really make these treats so good! They were gobbled up by everyone.

What you'll need
  • 1 cup dates
  • 1 cup almonds
  • good splosh of pure maple syrup
  • teaspoon of organic coconut oil
Instructions
  1. Place ingredients in food processor or thermomix and blitz until finely processed. I did mine for about 10-20 seconds on speed 6 in the thermomix.
  2. Wet hands, roll into balls and eat straight away or store in fridge or freezer.

  2. Oh they look so good! If time allowed they could be rolled in coconut or even chocolate for a decadent treat. I will definitely try them.

  4. I go through heaps of paleo sites and blogs for recipes . Nom nom paleo is a great one especially for kid friendly recipes , great ideas for lunch boxes too : ) . As well as using the coconut oil in baking and desserts it’s great to roast pumpkin, and stirfry asian greens etc. Eat drink paleo is another great blog, and i’m sure this girl is from sydney too, her recipes are a few ingredients and cost effective too. Loving the updates corrie, hope it’s starting to work for you . Are you seeing any sutle changes yet or still too early ?

  5. We love date balls here too. I like to cook the dates to a paste then I add oats, coconut oil (about a tablespoon), chia seeds, occasionally a little milo or cocoa and anything else that takes my fancy, roll them in coconut too. Mine have to be nut free to take to kindy and school though.

  7. I’m with you… always chucking in a combo of what’s in the pantry! Current “balls” include protein powder and cacao powder as well as dried fruit, LSA, coconut oil and tahini!

  9. Ahhh you made them finally….now you just need to add cocoa to the mix and they become chocolate yum yum balls and if you want a finer texture you can use almond meal 😉
