date night risotto

I have called this date night risotto because, well, date night happens at home these days. The kids in bed, a nice meal, maybe a bit of takeaway, a little glass of wine which I don’t drink much of these days and you have date night in. You could also call this dish ‘I have nothing in the vegie crisper risotto’ because most of the ingredients are from your pantry. Nice.

Now my Thermomix has probably paid for itself just by the number of times I’ve made risotto in it. I think it’s one of the best things that it does and I’m sure all the Thermomix owners out there are nodding their heads with me here.  It’s just too easy.

Now the thing about Thermomix risotto is that when it’s finished cooking it looks like this….but don’t worry, it’ll be all right on the night. You leave it in your thermoserve bowl which keeps things warm.

 You cover it up and it works it’s magic in 5 minutes.

Time to plate it up.

delicious and easy risotto

What you'll need
  • 1 onion
  • 2Tbsp butter or olive oil
  • 400g Arborio rice
  • 100mls/g white wine or vegetable stock
  • 1L vegetable stock
  • handful of cherry tomatoes, halved
  • about 8-10 marinated artichokes
  • small jar sliced sundried tomatoes, drained
  • 200g Danish style feta
  • pepper to season
Instructions
  1. Peel and cut onion in half and place in TM bowl. Process on speed 5 for 10 seconds.
  2. Scrape down sides of bowl, add butter/oil and sauté for 2-3 minutes at 100 degrees on speed 1. Scrape down the bowl again.
  3. Add in the rice and wine (or you can use 100mls stock) and sauté for 2 minutes, 100 degrees on reverse and speed 1 or 2. (you can use your butterfly and speed soft and reverse).
  4. Now add in the artichokes, a few cherry tomatoes, 1000mls stock and cook for 17 minutes, 100 degrees, reverse and speed 1 or 2. (you can use your butterfly and speed soft and reverse).
  5. When it's finished cooking pour into your thermoserve and tip in the sundried tomatoes and feta. Mix well and then cover up and leave for 5 minutes.
  6. When time is up give it a good stir again, season if you like and serve. You can pop a bit of butter over the top for a bit of extra creaminess too.
  7. Enjoy..................

    Is the Thermomix really worth it? Do you still use pots and pans or does that replace it? I have a Vitamix and I’m not sure if I would be doubling up with a Thermomix. What made you decide to get one?

    • I’m going to write a post soon as I get this question so much. I really wanted one for a few years but ruled it out on cost basis. For me I wanted to make more food from scratch, quick family dinners really sold it to me. I love how it does sorbet. It cooks pasta in the sauce and stirs it all for me. Making my own caster and icing sugar has been a huge saving and cupboard space.
      I hardly use my saucepans these days. Maybe to do 2 minute noodles, spaghetti for the bolagnese, if I’m boiling something for a dessert maybe.
      oh and the white sauce is delicious. you do custard or a white sauce in 7 minutes flat from start to finish. Book a demo or ask a friend to have one, they do 6 or more dishes and show it off
      we do a lot more cooking from scratch and also are a bit more adventurous with food since it came to live here.

    Received delivery of my Thermie two weeks ago. I have used it everyday. Only negative, you can make white chocolate custard in seven minutes. No effort required, not good.
    Husband loves it also. Money well spent using his words.

    LOVE MY THERMOMIX….so much I became a consultant…my teenage daughters love it too, so simple to use. Awesome risotto flavours, thanks for that, will give them a go! I got home from a demo one night and my 16 yo pulled out the TM and starting cooking a chicken risotto for dinner…I went to sleep on the lounge!!! :)

    1 litre of vegetable stock? Is that the thermie veggie stock ? Surely

      Is it really 1Litre of stock that you use?? Or do you use XX amount of tablespoons of TM stock and add water?

      • oh thank you for your question Lynda! sorry it’s been a crazy weekend at a fete where I was managing a stall. This was before I made my own thermomix stock (shock horror) and used liquid stock. So I would use 1-2Tbsps of thermomix stock depending how you like it. I like 2 Tbsp in mine but some people might like 1Tbsp and then 1 L of water. Thank you and hope that helps and sorry for my late reply:)

  10. I just whipped this up for my 3 and 4 year old, without artichokes though, tasty recipe thanks! I just used stock cubes and yes 1 litre. Will make this again! Lots leftover for mummy and daddy, not sure about date night though, too tired! Ha ha!
