parsnip + apple soup

We are soup people here. Well except the 3 big kids, they are not big fans. The rest of us love soup. So when retro daddy took those same 3 big kids to the AFL for the first time on the weekend, I took it as an opportunity to have soup for dinner. It was cold and rainy and I’d been dying to convert one of my favourite soups to the thermomix. Parsnip + apple. A recipe I picked up in England and loved making for myself over there. Way back in my single girl days when I could happily have soup for dinner and not worry about what my kids were going to eat.

and my littlest buddy emerson loved it! He’s been feeling a little sick the last few days but loved the soup…….I fed him by the way. He likes to think he can do it himself but soup is a bit tricky. I think these are some of my favourite pics of him, runny nose and all. The sweetest little guy ever.

I love my soup sweet so 2 apples would work for me, if you're not a fan of sweet soup just 1 apple will be perfect.

What you'll need
  • 1 brown onion
  • 2-3 large parsnips ( I only had 2 parsnips so used a potato too)
  • 1 -2 apples
  • 600ml vegetable stock
  • pouring cream to serve
  • salt and pepper to taste
Instructions
  1. Peel onion and slice in half. Place in thermomix bowl and chop on speed 5 for 10 seconds
  2. Scrape down the sides of the bowl, add butter and sauté for 3 minutes at 100 degrees on speed 1.
  3. Scrape down bowl again, add roughly chopped vegetables and apple and process on speed 5 for 10 seconds.
  4. Scrape down bowl, add in stock and cook for 18-20 minutes at 100 degrees on speed 1.
  5. Now we're going to puree the soup so gently increase the speed from speed 1 to speed 9 for about 20 seconds. Remove lid carefully, taste and season.
  6. I like to add a bit of cream now and gently combine.
  7. Serve and enjoy.
  8. If you don't have a thermomix just roughly chop your vegetables, sauté your onion in some butter or oil for a few minutes. Add in the vegies and apple and sauté about 5 minutes. Add in stock, bring to boil, simmer for about 20 minutes. Puree, season and add in a bit of cream and enjoy.

  2. What an unusual combo for soup. It sounds nice. I haven’t made soup since I put loads of effort into a potatoe and leak soup one time. I was wondering what the black bits were when I’d finished blending it and realised it was perished rubber from one of the parts of the stick blender! I had to throw the whole lot out, along with the stick blender :-(

  3. I too love soup but have trouble convincing my hubby it’s a suitable/filling tea!!!! It’s so frustrating as is such an easy meal to have ready for those days when there is meetings, school pick up jazz etc….. Need to work harder on educating him 😉
    A tip a friend gave me the other day with little kids wanting to feed themselves and soup being so messy is that she puts it in a sipper cup for them! I so wish I had thought of it when my girls were smaller….
    I read your blog all the time but rarely if ever comment…. But felt I just had to share the sipper cup tip!

Last night most of my family came over for dinner, what to feed ten people, soup of course, well for the first course followed by the biggest meatloaf and bbque sauce topping that I have ever made, all 26cm of it bar two small slices I kept for my lunch today, all gone. I have never eaten, nor slurped parsnip and apple soup, interesting, I will have to make a small soup for myself as a taste test before introducing it to the herd
