simple chocolate cake

I love having some cake or something yummy in the kitchen when I’m having a quiet day at home. And if it involves chocolate then it’s even better. I wouldn’t have minded a slice of my vegan chocolate fudge cake. Today’s baking had to be quick and easy. One of those ‘just chuck it all in and mix’ kind of cakes and it had to use what was in the fridge and pantry to avoid any trips to the shops.

CWA recipes are always a winner when it comes to basic recipes and I found a chocolate buttercake recipe from the latest CWA cookbook I bought, well retro daddy bought, called Jam Drops & Marble Cake (60 years of CWA Award Winning Recipes). And I just love the tips from 1960/1961 for this recipe. ‘To be iced and may be decorated or piped with a simple design. May be baked in any shaped deep tin except a ring tin’. So there you have it. Don’t bake it in a ring tin. You heard it here.

I wanted to reduce the butter in the recipe and was low on milk so I’ve changed ingredients but wanted it to still be a good old chocolate sponge cake. Uniced here so I can have more. The original CWA Chocolate Buttercake was first judged in 1952 and my version was judged in May 2013 by elodie. Best kitchen helper in the world who has figured out she can drag the kitchen stool over the bench by herself. This was after she had helped herself to the icecream container from the freezer.

Recipe type: Baking
What you'll need
  • 125g unsalted butter, room temperature
  • 3 eggs
  • 165g caster sugar
  • 220g self raising flour
  • 50g cocoa
  • 160ml light pouring cream/milk
Instructions
  1. Place all ingredients in your Thermomix bowl and process on speed 5 for 1 minute. Scrape down half way through.
  2. If you don't have a Thermomix just place them in your mixer or food processor and process 2 minutes.
  3. Pour into a lined cake tin or a buttered and lightly floured tin and bake in a preheated 180 degree oven for about 45 minutes.
  4. When a skewer or knife comes out clean your cake is done.
  5. Leave cake in pan for a few minutes then lift out with paper and leave to cool on cooling rack. I enjoyed a warm slice or two.
  6. Ice with a simple chocolate icing or just enjoy

  5. Corrie, I have a couple of recipes where everything gets thrown in together. One is baked in a ring tin and turns out perfectly everytime. I really think the prohibition on the ring tin is a condition of a compassion class. If you look at the title you can see it comes from a particular schedule. Make allowance for cooking times and all will be well.

I’m still rather new with my Thermie and not confident in converting receipes but I have always wondered if you can somehow get the butter to ‘room temperature’ in the thermie? I’m never organised enough to plan the room temp butter. If I feel like cooking I go for it cause that urge isn’t around all the often!

    • I actually pop mine in the microwave for 20 seconds to get room temperature:) I’ll have a look online and see if I can find out for you

  14. My colleague recently bought a Thermomix and is raving about it. I prefer to bake rather than cook. Does is replace the processor for pastry and the stand mix for cakes? This cake looks great and sounds so easy I’m wondering if there are more like it. Do you think it is worth the investment? Thanks.

    Quick, easy and delicious. I leveled the cake a little then covered it with Ganache ( recipe from the ‘Everyday Cookbook’) . Thanks for sharing, I will definately be baking this again.

  17. Thanks for this great easy recipe. I made this cake in a loaf tin (x2) and used it as building blocks for my son’s dinosaur train birthday cake. I even had enough cake left to make a bonus volcano!
