It wouldn’t be Christmas if there wasn’t a bit of rocky road being made in our house. I haven’t started making it yet but it will make an appearance as the school year comes to an end. And I’ve had a few messages asking where to find my recipe so I decided just to make a new recipe card all in the one spot. Just for you this Christmas.

And my only advice……always make double batches. Nothing worse than making up one batch to give away and not have any to eat at home. The menfolk like to know that you’ve saved a bit for them

We give out rocky road to teachers, friends, neighbours, family………everyone really! Everyone loves it and it’s a total no brainer. Enjoy………….and don’t come back and tell me you ate it all. You know how it goes here – all care taken, no responsibility given.

And don’t forget if you’re giving it away to make it look special! These are just little tumblers I picked up at my local homewares store with a bit of cellophane and ribbon. Too easy. Plus once it’s wrapped you can’t dig into it to eat it.

You will always make friends with a batch of rocky road

What you'll need
  • 2 bags of white chocolate melts (375g bags)
  • 1 bag of raspberry lollies (or 100g turkish delight for a fancier version)
  • 2 bags of mini marshmallows
  • OR 1 bag regular marshmallows for the chunky rocky road
  • ½ cup desiccated coconut and extra to sprinkle
Instructions
  1. Melt chocolate in a large bowl in your microwave. I do 3 -4 minutes on medium and stir a couple of times for a double batch of chocolate like this recipe.
  2. Do not put it in the microwave and walk away. Chocolate can go a bit crazy when you turn your back on it.
  3. In a large bowl combine the raspberry lollies (or turkish delight), marshmallows (little or big ones) and desiccated coconut. Pour in melted chocolate and stir well. Working quickly spread into a silicone tray (I use a tupperware slice tray) or a lined lamington tin.
  4. Sprinkle with a bit of extra coconut.
  5. Refrigerate at least 30 minutes until set. Slice and serve or wrap up or eat.

  5. I have a recipe that I’m making this year as well as the usual chocolate and nut. It has cranberries, white chocolate and dried strawberries, it looks good, hope it tastes as good

  10. Ah funny, I was going to look back to get your recipes again as they were a hit last year and so easy to make! I think making a double batch is sound advice as the maker does also have to be a taster!!
